Why does honey precipitate into crystals?
The precipitation of honey is concerned with the amount of glucose found in the source.

The plants with high glucose as well as the natural variation brought by low temperature naturally make the honey precipitate. Honey crystals can easily melt in your month.

The 100% pure honey can precipitate easily. In particular, when it is stored in low temperature (less than 15℃) or when its water content is less than 22%, the glucose in the honey can easily separate and precipitate into crystals.

We usually see this phenomenon in the honey such as lychee flower honey, canola flower honey, Beggarticks honey, orange honey, pomelo honey, winter honey and paperbark flower honey, and other honey as they contain glucose at over 42%.

Comparatively, longan flower honey precipitates less easily; however, it can precipitate into crystals as well if kept in low temperature for a longer period of time.
How to easily distinguish the real and fake crystallization of honey.
If all honey can precipitate into crystals, how can we distinguish the real from the fake?

Hold a spoonful of natural honey crystals in your mouth and you will find that the honey precipitates naturally and d melts faster.

The natural phenol and enzyme extracted from the plants and flowers leave a natural fragrance in your mouth yet are not-so-sweet.

Crystals of fake honey do not dissolve easily in the mouth; moreover, the sticky sweetness lasts for a long time.

You would only feel the artificial taste instead of natural fragrance or natural enzymes.
Various Ways to enjoy honey crystals
Besides enjoying the honey crystals as you enjoy liquid honey,  the unique feature of naturally precipitated honey crystals make them also suitable for being used as jam to spread on a piece of bread or cookie or enjoy it with different flavors of cheese.
How to turn the honey crystals back into liquid honey?
Open the lid of the honey jar and warm it up by placing the honey in a separate container in hot water or simply place it in hot water.

Then just wait until the honey crystals turn into liquid.
